【Shrimp Stuffed Tofu】

This is a lovely tofu dish, easy to make, delicious and great for parties.

Serves: 6 servings
Ingredients:
1) 10 large frozen white shrimp (size 30/40);
2) 1 package egg tofu;
3) 2 tsp finely chopped green onion, 1/4 tsp freshly minced ginger, 1/3 tsp salt, 1 tsp corn starch, 1/8 tsp ground white pepper, 1/2 tsp sesame oil, 2 tsp water;
4) 5 Chinese wolfberries, ½ tsp finely chopped green onion;
5) 1.5 tsp light soy sauce, 1.5 tsp Yummy House soy sauce, 1.5 tsp oyster sauce, 1.5 tsp fish sauce, 2.5 tbsp water, 1/3 tsp sugar, 1/8 tsp ground white pepper;
6) 1/2 tsp sesame oil.
Directions:
1: Thaw the shrimp by putting it in a bowl of cold water. Peel and devein shrimp, then rinse under cold running water. Dice shrimp (Picture 1) then chop finely (Picture 2). Put finely chopped shrimp in a small bowl with all ingredients of Ingredient 3) (Picture 3). Stir in one direction with a pair of chopsticks for 3 minutes until the mixture becomes sticky (Picture 4).
2: Rinse egg tofu under cold water and then slice into 1 cm thick discs. Scoop some tofu out from the center with a small spoon (Picture 5). Spoon 2 tsp of shrimp filling on top of each tofu disc (Picture 6). Decorate with half Chinese wolfberry and a few finely chopped green onion. Place all stuffed tofu on a plate.
3: Fill a large steam pot with 3 cups of water and bring to a boil. Steam the tofu for 4 minutes on high heat (Picture 7). Remove and set aside.
4: Add all ingredients of Ingredient 5) in a small non-stick sauté pan and bring to a boil over high heat. Remove from heat and stir in 1/2 tsp sesame oil. Pour the sauce onto the steamed tofu before serving.
