my children love the dim sum baked egg tart. have you ever tried baking in your kitchen? I am familiar w the custard filling except I can’t find the true receipe for the pastry dough. most of the cookbooks suggest using store-bought pastry puffs or the tradition eggs+flour+butter tart dough. The result is not the same as the chinese crispy & airy pastry. will you please share your knowledge? thank you!
