【Braised beef and potatoes】

Ingredients:
1) 1250 beef shank or flank steak;
2) 2 medium size potatoes about 440g, 2 tbsp olive oil;
3) 1.5 tbsp olive oil, 2 green onions chopped to 1 inch long pieces; 3-4 slices of fresh ginger, 1 anise star, 2 cloves;
4) 2 tbsp light soy sauce, 1.5 tbsp premium soy sauce, 1 tbsp dark soy sauce, 2 tbsp brown sugar.
Directions:
1: Beef cut into 2.5 cm cubes and soak in cold water for 30 minutes and then drain. Peel off potato skin, rinse and pat dry with a paper towel. (You can leave the skin on if you prefer). Cut each potato in 2 equal portions lengthwise then cut into 4 equal-size cubes.
2: Add chopped green onions, sliced ginger, 1 anise star, 2 cloves (Picture 1) and 1.5 tbsp olive oil to a non-stick sauté pan over high heat, add beef cubes (Picture 2), sauté for a few minutes until water evaporates and beef turns brown (Picture 3).
3: Add all the ingredients of Ingredient 4) (Picture 4) and bring to boil. If you would like to decrease the cooking time, you can transfer beef and sauce to a InstantPot and pressure cook for 30 minutes. Otherwise, add 2 cups cold water and bring to boil, reduce to low heat and simmer for 1.5 hours.
4: Meanwhile, plug in the Ropot cooker, place with the flat inner pot, and press Power button to preheat the cooker. Add 2 tbsp oil and potato chunks (Picture 4), close the lid, press Function to select Panfry function, when 3 seconds count down finishes, press + sign and increase time to 6 minutes, program starts.
5: When the program ends, open the lid from side, turn over the potato chunks (Picture 5). Close the lid, press Function to select Panfry function again, repeat until 4 sides are cooked (Picture 6).
6: Add cooked potatoes to already simmer for 1.5 hours, continue cook on medium-low heat for 10 minutes, stir occasionally. On medium-high heat, open lid and reduce the sauce to thickness.
7: Transfer the cooked beef and potatoes into to a serving bowl, serve immediately over steamed rice. Yummy!!
