【Braised pork baby ribs and long beans】

It is very easy and quick to make this tasty dish using InstantPot pressure cooker.

Serves: 6 servings
Ingredients:
1) 850g pork baby ribs, cut into small pieces;
2) 150g dried long beans (you may find it in Chinese grocery store);
3) 1 tbsp olive oil, 1 green onion cut to 2-inch in length, 10g fresh ginger sliced, 2 star anise, 1 tbsp anka sauce;
4) 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1tbsp premium soy sauce, 1 tbsp brown sugar, 1/2 tsp salt.
Directions:
1: Ahead of time soak dried long beans in cold water for 2 hours (Picture 1), rinse and cut into 1 inch long pieces. Wash the ribs with warm water and cut between bones into small pieces. Plugin InstantPot pressure cooker, add 1 tbsp oil. Select “Sauté” function “High”, sauté green onion, ginger and star anise for 1 minute. Then add baby ribs and sauté for 2-3 minutes (Picture 2).
3: Add all ingredients of Ingredient 4) and mix well. Add long beans and mix well (Picture 3), cover the lid and place the pressure valve to “Seal” position. Press “Manual” button and set 23 minutes of cooking time.
4: When the program ends, wait another 5 minutes. Slowly release the pressure then open the lid and gentle mix (Picture 4). Place the braised baby ribs an long beans into to a serving bowl, serve warm with rice. Yummy!!
