椒盐里脊

自己做椒盐里脊,稍微少放点盐和花椒粉,毛毛和毛毛爸都非常爱吃。
用料:
1:猪里脊肉(Pork loin),600克。洗净备用。
2:绍酒1大匙,金兰老抽1大匙,万字牌生抽酱油1大匙,糖1茶匙,水2大匙。
3:蛋黄一个。
4:低筋面粉(Cake & Pastry flour)2/3杯,生粉1/3杯拌匀。
5:玉米油1.5杯。
6:橄榄油2茶匙,葱花1大匙,桔红和黄柿子椒各15克切丁,盐1/2茶匙,花椒粉1/2茶匙。
做法:
里脊肉切0.3厘米片(图A),加上2料用手抓捏几分钟(图B),盖上盖放冰箱过夜。
中号不粘锅放玉米油1.5杯,置炉上开大中火烧热。腌好的里脊肉放入蛋黄拌匀(图C),然后放入盛面粉的塑料袋离封口摇均匀(图D),都掉多余的面粉,下锅里炸至微黄捞出(图E),沥油备用(图F)。里脊肉要分几次炸。不粘锅放橄榄油2茶匙,置炉上开大中火,放入葱花(图G)炒香,放柿子椒丁(图H)和炸好的里脊肉翻炒几下,然后放入盐和花椒粉翻炒兜匀出锅。
