【Chinese Fried Dough Sticks】

Chinese fried dough sticks (Youtiao in Chinese) is a traditional Chinese breakfast food, and one of my childhood favorites. I don’t make this often at home since it is a deep fried food. This recipe also uses Yeast to fast the process, you could eat freshly fried Youtiao in an hour.

Ingredients:
Dough:
1) 1.5 cups unsifted all-purpose flour (240g), 1/3 tsp salt, 1.75 tsp baking powder, ½ tsp baking soda, ½ tsp fast rising yeast , mix well;
2) 1 extra large egg, lukewarm water (100-110g);
3) 1.5 tbsp avocado oil or other cooking oil;
4) 1 tsp oil;
Others:
5) 5 cups corn oil or vegetable oil.

2: On a lightly floured surface, shape the dough into a log, press down and roll out to a 10×30 cm rectangular. Cut the dough into 1.5 cm wide stripes (a total of 20 stripes) (Picture 4). Place one piece on top of another, and press down in the center with a chopstick (Picture 5).
3: In a wok or a medium sauce pot, heat 5 cups frying oil on medium-high heat (6-7) until 180 C. If you don’t have a thermometer, drop a tiny dough in the oil. If it is fast rising to the surface means the oil is ready to fry.
4: Hold both ends of each Youtiao and stretch in double length, then gently drop it into the hot oil (Picture 6), be very careful, not to splash. Turn dough on both sides continuously with a pair of chopsticks or tongs until it is golden brown. Repeat for the rest of dough. Drain on paper towels and serve warm.
