【Sweet Glutinous Rice Balls with Roasted Peanuts】

This is Hong Kong style “Tang Yuan”, made with glutinous rice flour. These sweet chewy little balls topped with crunchy roasted peanuts makes a perfect delicacy snack.

Serves: 6 servings
Ingredients:
1) 1 cup glutinous rice flour (130g), ½ cup lukewarm water (118g);
2) 3 tbsp brown sugar (33g), 2 tbsp water (30g);
3) 2 tbsp honey (30g), 2 tsp boiling water (10g), mix well;
4) 3 tbsp crushed roasted peanuts (20g).
Directions:
1: Place glutinous rice flour in a medium size bowl. Add warm water to form dough (Picture1). Divide dough into 20 equal portions. Form each portion into a small ball by rolling it between your palms (Picture2).
2: Fill a small saucepan with 2 cups water and bring to a boil. Add all glutinous rice balls (Picture 3). Stir to prevent them sticking to the bottom. Cook until glutinous rice balls float on the surface (Picture 4). Drain and set aside.
3: Add all ingredients of Ingredient 3) in a small saucepan. Cook on medium heat until sugar dissolves into syrup; add glutinous rice balls (Picture 5) and cook for another minute on low heat.
4: Spoon out glutinous balls on a plate or in a small serving bowl, drizzle 1 tbsp diluted honey and sprinkle some crushed peanuts before serving.
