【Chinese peanut cookies】

A traditional Chinese peanut cookie, used cooking oil to make this yummy cookies.
Prepare time: 25 minutes
Cook time: 20-22 minutes
Level: low
Serves: 16 servings
Ingredients:
1) 1/2 cup all-purpose flour (80g), ½ Cake & pastry flour (70g), 1t Baking powder, 1/2t Baking soda, 1/3t Ammonium Carbonate ;
2) 1/3 cup peanuts;
3) 1 beaten egg, use 1/5 tbsp (about 25 g),
4) 1/3 cup + 1 tsp corn oil (80g), 1/3 cup sugar (72g), 1/2 tsp vanilla extract;
5) egg wash: left over beaten egg;
Directions:
1: Place peanuts inside a plastic bag (Picture 1), seal and crash peanuts into very small pieces with a rolling pin (Picture 2).
2: Line one 22×32 cm baking pan with parchment paper or silicon baking sheet, set aside.
3: Place all ingredients of Ingredient 1) in a medium size bowl (Picture 3), mix well. Add crushed peanuts (Picture 4), mix well.
4: In a medium mixing bowl add all ingredients listed in Ingredient 4) and 1.5tbsp beaten egg (Picture 5). Then use a fork to mix oil, egg and sugar together (Picture 6). Add flour and peanuts mixture to the oil egg and sugar mixture (Picture 7), mix with the fork to just combine and form dough.
5: Preheat oven at 360F, divide the dough into 16 small pieces and form a ball and press into 0.8 cm thick circle (Picture 8) and put them on a parchment paper lined baking sheet. Bursh with egg wash (Picture 9).
6: Bake the cookies in the oven for 20-22 minutes until side are golden. Cool before serving.
