【Braised Beef Shank in Red Fermented Rice Paste】

It is very quick to make this tasty dish using InstantPot pressure cooker.

Serves: 12 servings
Ingredients:
1) 2150g beef shank;
2) 1.5 tbsp avocado oil , 1 green onion cut to 2-inch in length, 10g fresh ginger sliced, 2 tbsp red fermented rice paste;
3) 2tbsp cooking wine, 2 tbsp light soy sauce, 2 tbsp dark soy sauce, 2tbsp premium soy sauce, 2 tbsp brown sugar, 1/2 tsp salt.
Directions:
1: Wash beef in cold water and then drain. Dice beef into 10x4x4 cm pieces. (Picture 1). In a large non stick pan, add 1.5 tbsp oil, chopped green onion, sliced ginger and beef, on high heat, saute for a few minutes (Picture 2). Add 2 tbsp red fermented rice paste, saute for another minute (Picture 3).
2: Transfer beef and sauce into InstantPot pressure cooker (Picture 4), add all ingredients of Ingredient 3). Cover the lid and place the pressure valve in “Seal” position. Select “Pressure” or “Manual” button and set 40 minutes of cooking time.
3: When the program is done, wait another 5 minutes. Slowly release the pressure then open the lid (Picture 5). Select “Sauté” and set temperature to “More”, stir occasionally until the sauce is reduced to 1/3.
4: Place the braised beef into to a serving bowl, serve warm with rice. Yummy!!
