【Salty eggs】

Salty egg is very popular dish in China. It can be served with steamed buns or congee. It is best to use duck eggs for making the salty eggs, but regular eggs will do.
Prepare time: 20 minutes
Cook time: 8 minutes
Standard time: 20-25 days
level: low
Serves: 12 servings
Ingredients:
1) 12 eggs;
2) 1/3 hard liquor (above 45% alcohol);
3) ½ cup salt;
4) 12 pieces food wrap;
Directions:
1: Wash eggs (Picture 1) with cold water and let them to dry.
2: Pour liquor in a small bowl (Picture 2). Dip each egg in the liquor (Picture 3), then roll it in salt bowl (Picture 4) to coat a layer of salt.
3: Wrap the egg with a piece of food wrap (Picture 5). Repeat the process to finish the rest of eggs (Picture 6).
4: Place wrapped eggs under the sun for a few hours and then bring them to a cool place and let them stand for 20-25 days.
5: Wash off salt and boil eggs for 8 minutes, rinse with cold water before serving.

可以不要,饱和盐水是盐份很高,总有一部分盐不再溶化
