【Spicy pork and cashew stir fry】

A quick, spicy and delicious dish, meat is so tender. You ought to try it.

Serves: 5 servings
Ingredients:
1) 1 Tender pork loin 480g:
2) 1 tbsp cooking wine, 1 tbsp light soy sauce, 1 tbsp premium soy sauce, 1 tbsp dark soy sauce, 2 tsp corn starch, ½ tsp sesame oil, ¼ tsp salt;
3) 3 stalks celery;
4) 50g roasted cashew;
5) 1.5 tbsp Avocado oil or other cooking oil, 1 tbsp chili oil, 1 tsp sliced ginger, 1 tbsp chopped green onion, 6-12 dried chili pepper, ¼ tsp ground Sichuan peppercorn;
6) 1/6 tsp salt;
7) 1 tbsp chili soy sauce paste, ½ tsp sesame oil.
Directions:
1: Remove white membrane on tender pork loin, rinse with water and cut into 0.5 cm cubes. Add all ingredients of Ingredient 2) (Picture 1) and massage the meat with your fingers for 2-3 minutes (Picture 2), set aside. Rinse celery stalks with water then dice, set aside.
2: Heat 1.5 tbsp Avocado oil and 1 tbsp chili oil in a non-stick sauté pan over medium-high heat. Sauté sliced ginger, chopped green onion, dried chili peppers and ground Sichuan peppercorn for 30 seconds (Picture 3). Add diced celery, stir a few times, add 1/6 tsp salt, stir and cook for 30 seconds (Picture 4).
3: Add marinaded pork (Picture 5) stir and cook for about 2 minutes until meat almost cooked. Add cashews and all ingredients of Ingredient 7) (Picture 6), stir to mix.
4: Transfer to a serving plate and serve with some steamed rice.
