Ingredients:
Dough:
1) 160g all purpose flour, 95g water, 40g avocado oil
Oil paste:
2) 50g avocado oil, 90g cake&pastry flour;
Meat filling:
3) 3 green onions, 2 shallots, 200 g extra lean ground pork, 1/4 tsp salt, 1/6 tsp thirteen spice powder or white pepper powder, 1/4 tsp chicken broth mix, 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp sesame oil, 2 tsp corn starch, and 2 tbsp cold water;
Others:
4) 1 tbsp avocado oil .

1: Dough: Measure flour in a medium size bowl, add water and oil in Ingredient 1) to flour to form soft dough. Knead the dough for about 5 minutes until smooth and elastic. Cover with plastic wrap or a lid and then let it stand for 20 minutes.
2: Oil paste: Combine all ingredients of Ingredient 2) in a small container. Mix well with a spoon, set aside.
3: Meat filling: Finely chop green onions and dice shallots. Combine all ingredients of Ingredient 3) in a bowl, mix well. Stir in one direction with a pair of chopsticks for 2 minutes until the mixture becomes sticky, set aside.
4: Rub some corn oil on both hands and on working surface. Knead the dough a few times and divide into 10 small equal portions. Roll out each portion into an oval about 10 cm long, and smooth on 1/10 of oil paste (about 1.5 tsp). Fold the bottom third up and the top third down. Then roll out again and fold in third. Cover and let it stand for 10 minutes while working on other 9 portions.
4: Turn 90 deg., press down and roll out into a 4×12 cm rectangle. Again, fold the bottom third up and the top third down. Roll the dough out into a 12×16 cm rectangle (Picture 13). Fold from left to right to form a slender roll (Picture 14). Roll from bottom to top (Pictures 15). Cover with food wrap while working on the remaining 11 portions.
5: Roll the dough out into a 12×16 cm rectangle, add 2.5 tbsp filling and wrap into a 4×8 cm rectangle.
6: Plugin the 【AirGo】cooker and brush the pan with 1tbsp oil, use “Function” to select the “Crepe/Naan” program, set temperature to 400F and time to 16 min. press “start” to initiate the program. When preheat is done, arrange meat pockets in the pan. Close the lid and let the program to continue.
7: When hear beeping for flipping, open the lid and turn over the meat pockets. Close the lid and let the program to finish. Transfer to a serving plate and serve immediately.
Tips:
Leftover rolls can be frozen. Microwave leftover rolls 25-30 seconds then toast it before serving.
