【Braised Chicken Wings with Mushrooms】

I used two different dried mushrooms to cook with chicken wings. It is a quick and tasty dish at one’s home or party.

Ingredients:
1) Chicken drumettes 1250g;
2) 15 dried Agaricus Blazei mushrooms and 15 dried Chinese mushrooms;
3) 1 tbsp olive oil, 3-4 slices of fresh ginger, 1 green onion cut into 2-inch length;
4) 1 tbsp cooking wine, 1 tbsp dark vinegar, 2 tbsp premium dark soy sauce, 2 tbsp light soy sauce, 1/2 tsp salt, 2 tbsp sugar, 1 cup water;
5) 1 tsp sesame oil.
Directions:
1: Soak dried Agaricus and Chinese mushrooms in warm water for 4 hours, rinse and drain. Rinse and pat dry chicken drumettes. Heat 1 tbsp olive oil in a non-stick sauté pan over high heat. Sauté sliced ginger and green onion for about 1 minute (Picture 1). Add chicken drumettes (Picture 2), stir and cook for 2-3 minutes.
2: Add mushrooms and sauté for another minute (Picture 3). Add all ingredients of Ingredient 4), stir and bring to a boil (Picture 4). Cover the lid and reduce to medium-low heat, simmer for 20 minutes, stir occasionally.

3: Remove the lid and turn to medium-high heat. Reduce the sauce to about 1/6. Stir in 1 tsp sesame oil, then transfer into a serving plate.
