【蕨菜干烧鸡块】
【蕨菜干烧鸡块】 by 毛毛妈 毛毛爸最近回国同他的爸爸妈妈去皖南山区宣城、泾县旅游,发现当地的农家菜用蕨菜干炒肉丝很好吃,就跑到厨房向老板娘买了两斤蕨菜干带回来。今天配上点黑木耳,做了个蕨菜干烧鸡,很好吃。 用料: 1:鸡1只1300克,洗净斩块待用; 2:蕨菜干50克,黑木耳2把(15克); 3:橄榄油1.5大匙,葱1条洗净切段,姜2-3片,八角1个,丁香2粒; 4:料酒1大匙,万字牌生抽酱油2大匙,老抽酱油1大匙,头抽酱油1大匙,糖1茶勺,盐1/3茶匙,水1杯; 5:香油1茶匙。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 1、黑木耳泡发后,洗净沥水待用。蕨菜干先洗干净,再用温水泡8小时(图1),沥水待用。 2、不粘锅,加1.5大匙油,置炉上开大火,炒香剩余3料(图2),然后放入鸡块翻炒至外皮有些焦香(图3)。然后放入泡发好了的蕨菜翻炒几下。 3、依次放入4料煮滚,调中小火煮10分钟(图4),再放入黑木耳,盖上盖子,焖煮15-20分钟。打开盖子,调大中火稍微收汁,下5料香油兜匀就可出锅了。 You might also like:【芒果蛋糕卷】【蓝莓松饼】【Kung Pao Chicken】【宫保鸡丁】【Braised Pig’s Feet】不一样的【红烧猪蹄】
