超级酥松的【开口笑】
超级酥松的【开口笑】 by 毛毛妈 记得小时候吃的开口笑比较硬,口感不是很理想。我改良过的开口笑非常酥松,不过油炸的食品不要经常吃。 用料: 1:中筋面粉(all purpose flour)1杯(150克,直接从面袋里舀的,没过筛),泡打粉(baking powder)1/2茶匙,小苏打1/2茶匙(baking soda),糖1/3杯(70克),油酥(lard)1.5大匙(22克); 2:特大号鸡蛋1个打散,取一半蛋液,加水3大匙(45克)打匀; 3:白芝麻1/3杯; 4:玉米油 3杯。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 以上材料做24个开口笑。 做法: 1、将1料放盆里充分拌匀(图1),倒入2料(图2)和成团(图3)。 2、案板上撒上少量干面粉,将面团稍揉几下,再揉成直径1厘米长条,每隔1厘米切块(图4),揉成小圆球。 3、将每个小球沾下水,揉几下放入白芝麻盆里滚一滚(图5),均匀沾上芝麻,再揉几下让芝麻沾牢(图6)。 4、中号锅放入3杯玉米油,开大中火先将油烧热至300F/150摄氏度,关火后放入芝麻球(图7)(一次放不下的话先炸一半),炸至芝麻球浮起后,调小火继续炸至芝麻球开口(图8)。 5、开大中火,炸至开口笑呈金黄色后捞起沥油,冷凉后就可以吃了。 You might also like:肉松蛋糕卷【香烤三文鱼】【Honeycomb Bread】【蜂蜜小面包】豆腐葱花软饼Easy Tofu Scallion Pancake豆腐葱花软饼Easy Tofu Scallion Pancake
