【萝卜糕】
【萝卜糕】–English Follows by毛毛妈 去广东馆子饮茶的时候,总是要点一盘萝卜糕。N年前一位广东伯母给过我萝卜糕的方子,自己也做过,就是要蒸很长时间,比较费事而且弄得满屋子都是味道。这次用电压力锅来蒸,就会很方便。萝卜糕的味道非常棒,不妨试试。 用料: 1:白萝卜2条750克,去掉外皮,洗净备用; 2:腊肠1.5根,虾米1/4杯在水里泡软; 3:橄榄油2大匙,姜蓉1茶匙,葱花2大匙,盐1.5茶匙,糖1/2茶匙,鸡精1/4茶匙; 4:粘米粉半包大约1.5杯(200克),水1杯(240克) 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 1、白萝卜切成细丝,腊肠和泡软的虾米切小粒备用。 2、不粘锅置炉上开大火,放入2大匙橄榄油,炒香姜蓉和葱花(图2),下腊肠和虾米炒出香味(图3)。然后放入萝卜丝翻炒,再加盐、糖和鸡精炒匀。盖上盖子(图4),用中火焖煮几分钟至萝卜丝软身,离火冷凉。 3、粘米粉(图5)加水1杯调成面糊,倒入萝卜丝里拌匀。将米粉萝卜丝糊倒入中号长方形的玻璃盒里。如果有多余,放入一小碗里同蒸。 4、取出电压力锅附带的支架,放入内胆里,加水到2杯的线。将盛放萝卜糕坯的玻璃盒放在支架上(图6),盖上盖子,排气阀放置密封位置,选【蒸】档45分钟。 5、程序完成后,先冷却10分钟,再慢慢移动排气阀排气。取出萝卜糕,冷凉后玻璃盒盖上盖子,在冰箱里放几小时。 6、用小刀将萝卜糕四周剥开,反扣在案板上,用力震下来。然后切片,不粘锅置炉上开大中火,放入橄榄油1大匙,用中火将萝卜糕两面煎微黄,就可以上桌了。 Turnip Cake By Maomaomom If you go to a Chinese restaurant for dim sum, you will love this mouth watering dish … Continue reading
