【Fresh corn kernels and glutinous rice flour pancake】

I bought a few fresh corns at Farm Boy, very sweet and juicy. I make some pancakes using the fresh corn kernels and glutinous rice flour, very delicious.
Cook time: 10 minutes
Level: low
Serves: 5 servings
Ingredients:
1) 1 fresh corn;
2) ¾ cup glutinous rice flour (100g);
3) 2 tbsp lakanto sugar (26g);
4) ½ cup minus 2 tsp water (110g);
5) 2 tbsp olive oilor other cooking oil for pan frying.
Directions:
1: Remove the skin of the fresh corn, rinse with water and cut off kernels and put them in a medium size bowl (Picture 1). Add ingredients of 2-3) and mix well (Picture 2). Add 110 g water (Picture 3) and mix well until no dry flour lumps (Picture 4).
2. A non-stick frying pan on medium-low heat, add 1 tsp oil and use paper towel to spread the oil to coat entire bottom of the pan.
3: When pan is hot, drop every 1.5 tbsp batter evenly. Cook for 4-5 minutes until one side (Picture 5) is golden brown, loose the pancake.
4: Turn over the pancake, add 2 tsp oil and cook for another minute another 3-4 minutes until golden brown.
5: Take out the pancake, repeat the rest of batter, serve warm.
