【Shrimp and Egg Stir Fry】

This is a quick and delicious dish to make, ideal for serving with freshly baked pita bread.

Ingredients:

1) 1/2 package frozen peeled and deveined white shrimp (200g);
2) 1/4 tsp salt, 1/8 tsp ground white pepper, 1 tsp corn starch, 1/2 tsp sesame oil;
3) 3 extra large eggs, 1/3 tsp salt, 1/6 tsp chicken broth mix, 1 tbsp water;
4) 2.5 tbsp olive oil, 3 tbsp freshly chopped green onion.

Directions:

1:Leave frozen shrimp in fridge to thaw for 6 hours prior to cooking. Rinse shrimp under cold water and drain well. Combine shrimp with all ingredients of Ingredient 2) in a bowl (Picture 1); mix well and set aside for 15 minutes. Place all ingredients of Ingredient 3) in a bowl and beat well.

2: Heat 1 tbsp olive oil in a non-stick sauté pan over high heat. Sauté shrimp for 1-2 minutes until shrimp just turn pink (Picture 3). Remove from the pan and set aside.

3: Heat 1.5 tbsp olive oil in the same non-stick pan over medium-high heat. Sauté chopped green onion for about 45 seconds (Picture 4). Pour in beaten eggs (Picture 5), gently stir a few times until eggs start to solidify.

4: Toss in cooked shrimp (Picture 6) and gently stir. Remove from heat and transfer to serving plate.
