【Shrimp and green onion pancake】

Talking about pancakes, like most of you, I have had many types of sweet panckes. I also made a few of them for my family, such as Lemon Chia Seed Pancakes and Blueberry pancakes. Today, this shrimp and green onion pancake is not sweet version, but a savory type without added sugar and only with very little oil used, very healthy. Maomao is backing home for his reading week, so I made these pancakes for breakfast, he loved them.

Serves: 3 servings
Ingredients:
1) 1 green onion, 10 medium sized frezon shrimps;
2) 1 cup all purpose flour (160g);
3) ½ tsp salt, 1+1/3 tsp baking powder;
4) 2 extra large eggs;
5) 2/3 cup cold water (160g);
Others:
6) 1 tsp vegetable or corn oil.
Directions:
1: Rinse green onion with cold and chop finely (Picture 1), set aside. Soak frozen shrimps in cold water to defrost. Peel and devein the shrimp, rinse under cold water and drain well. Cut shrimps into very small pieces (Picture 2), set aside.
2: Measure in all ingredients of Ingredient 1) and 2) in a bowl (Picture 3) and mix thoroughly. In a bowl, place 2 eggs (Picture 4) and 2/3 cup cold, beat at high speed a minute (Picture 5). Beat in chopped green onion and chopped shrimp (Picture 6) to mix. Add flour mixture (Picture 7); beat at low speed for a minute to just combine (Picture 7). Let the batter stand for 10 minutes.
3: A heavy and non-stick pan on medium heat, coat with a thin layer of oil about ½ tsp by using a piece paper towel. Pour about ¼ cup pancake batter each into the hot pan, spacing out the pancakes (Picture 9). Cook for about 2-3 minutes, gently flip the pancakes and cook another 2 minutes (Picture 10) until both sides are golden brown.
4: Repeat for the rest of batter. Serve pancakes with hot chill sauce if desire.
