【Pesto Shrimp Pasta】

Maomao loves pasta. I made this pesto shrimp pasta for him and he loved it.

Ingredients:
1) Half package spaghetti (250g), 1 tsp salt, 1 tsp olive oil;
2) 200g frozen white shrimp, ¼ tsp salt, 1 tsp corn starch, 1.5 tsp olive oil;
Pesto sauce:
3) 4 tbsp olive oil;
4) 3/4 tsp salt, ¼ tsp ground black pepper;
5) 1.5 tsp freshly minced garlic;
6) 40 g fresh parsley;
Others:
7) 3 tbsp grated Parmesan cheese.

Directions:

1: Peel and devein shrimp, rinse and drain well. Measure in the rest of Ingredient 2) and mix well (Picture 1). Set aside for 20 minutes.

2: Heat 1.5 tsp oil in a non-stick fry pan over medium-high heat. Sauté shrimp (Picture 2) for 2-3 minutes until the color turns red (Picture 3), set aside.

3: In a large sauce pot, bring 6 cups of water to a rolling boil. Add 1 tsp salt and 1 tsp oil. Then place the spaghetti into the hot water and cook over medium heat for 10 minutes (Picture 4), stir to keep from sticking. Remove pot from heat and drain well.

4: Pesto sauce: While waiting for the spaghetti to cook, Measure all ingredients of Ingredient 3)-6) in a blender (Picture 5), blend until smooth (Picture 6).

5: Put the drained spaghetti back into the pot. Add cooked shrimp, pesto sauce and grated Parmesan cheese (Picture 7). Mix well (Picture 8) then transfer to a serving plate.
