鱼香肉丸
鱼香肉丸 软嫩可口,色泽红亮。 用料: 1:胡萝卜2根200克,去皮洗净切细丝,盐1/2茶匙。 2:瘦猪肉馅250克(Costco买的,extra lean ground pork)。 3:葱花2大匙,姜末2茶匙,盐1/2茶匙,糖1/3茶匙,万字牌生抽酱油1大匙,香油2茶匙,绍酒1大匙,鸡粉1/4茶匙(可省),生粉2大匙,面粉2大匙,水2大匙。 4:菜油或玉米油2杯。 5:橄榄油1大匙,辣豆瓣酱2大匙,姜末2茶匙,葱花1大匙,蒜蓉1大匙,水3/4杯,盐1/6茶匙,生抽2茶匙,镇江香醋2茶匙,糖1.5茶匙。 6:生粉1.5茶匙,水2大匙拌匀,香油1茶匙。 做法: 胡萝卜(图A)擦成丝(图B)放一盆里,加入所有2和3料(图C),然后用木勺搅上劲(图D)。小号锅放入2杯玉米油,开中火,油热后,用一汤勺沾下油取一份肉馅,反复与左手掌和勺之间搓成2厘米大小的肉丸放入油里(图E),炸成金黄色捞出(图F)。 不沾锅,置炉上开中火,加1大匙橄榄油,放入辣豆瓣酱及5料里的姜末,葱花,蒜蓉炒香(图G),然后放入剩余的5料及炸好的肉丸,加盖焖煮3-5分钟(图H),接着放入6料的生粉水兜匀煮滚(图I),最后淋下香油兜匀离火。 You might also like:【绿豆椪】Braised chicken and Chinese yam in soy sauce 山药鸡块山药鸡块 Braised chicken and C…笋尖烧排骨Braised Pork Ribs with Bamboo Shoot笋尖烧排骨Braised Pork Ribs with Bamboo … Continue reading
