太妃焦糖布丁-Caramel Crème Brulée
太妃焦糖布丁-Caramel Crème Bruléeby 毛毛妈 看到Caramel Crème Brulée这个名字,都会流口水的,不要错过噢。 用料: 1:白糖2/3杯(150克),水1茶匙,玉米糖浆1茶匙(Corn syrup)。 2:鲜奶油1又1/2杯(375ml)可用Whipping cream or half-and-half cream,香草香精(Vanilla extract)1茶匙。 3:大号鸡蛋蛋黄3个,糖2大匙(30ml),盐1/3茶匙。 4:白糖3茶匙。 其他:大号深烤盘一个,115毫升的烤杯(Ramekins)5个,火焰枪。 1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 预热烤箱325F,烧一大锅水备用。小号深锅置炉上开中火,放入所有1料(图A),边搅拌边加热至糖熔化(图C)层棕红色(图C)离火。糖煮到一半时,另起一中号深锅,置炉上开中火 放入所有料(图D),煮至微沸关火(图E)。 然后将煮好的糖汁,缓慢倒入煮好的鲜奶油里(图F),边搅拌均匀(注意:慢慢倒且要搅拌,不要让产生的蒸汽烫到)(图G)。将盛着太妃奶油汁的锅放入装有半池冷水的水池里(图H),冷至室温。将鸡蛋黄和所有3料放一小盆里(图I),用手动打蛋器打均匀。将蛋黄汁到入太妃奶油汁(图J)拌匀。过筛(图K)后,分别等量倒入5个115毫升的烤杯(Ramekins)里(图L)。烤杯放到一个大的深烤盘里,大烤盘里加上热水至杯半身,松松盖上锡箔纸(图M),放入预热至325F/160oC的烤箱内,烤25分钟。拿掉锡箔纸冷至室温(图N)。冰箱里冷藏2小 时,吃前每杯撒上白糖1/2茶匙,用火焰枪烧熔上面的糖成焦糖。没有的话,开烤箱的上火,将太妃布丁放最上层,Broil至糖成焦糖(1-2分钟)。想要更漂亮可以放上点打发鲜奶油及少许巧克酱装饰即可。很润滑,好味道。 You might also like:【酥皮蛋挞】【Dim Sum & Desserts】Chinese version is released!【中式点心】电子书上架了!高升牛肉Braised … Continue reading
