【菠菜蒸饺】 by毛毛妈 我们家毛毛一般是不喜欢菠菜的,但拿来做蒸饺,可以一口气吃它七八个。欢迎您来毛毛妈厨房的新网页,访问交流,提建议。 用料: 饺馅: 1:去根菠菜1捆400克,洗净; 2:去壳熟冰冻虾8只,冲洗沥水切小小丁; 3:葱1根切碎,香油1大匙 4:鸡蛋2只,加盐1/3茶匙打散备用,橄榄油1大匙; 5:生粉1大匙,盐1茶匙,鸡粉1/4茶匙,白胡椒1/4茶匙,糖1/4茶匙; 饺皮: 6:中筋面粉(All purpose flour) 480克(3杯),开水325克(1.5杯),玉米油1.5茶匙。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 饺馅: 1、菠菜洗净后开水里烫1分钟,沥水冲冷水(图1)。切小丁后,稍微捏去多余的水放一盆里。同时放入切好的虾肉及所有3料拌匀(图2)。 2、不粘锅,置炉上开大中火,放入4料里的油,锅热后倒入打散的鸡蛋,煎成蛋皮(图3),稍冷切碎丁,放入菠菜里,加入所有剩余5料拌匀为饺馅(图4)。 饺皮: 3、将6料中的水缓慢倒入面粉中且用筷子不断搅拌成面絮状个(图5),稍冷和成软面团,然后加1.5茶匙油揉到光滑(图6),保湿静置15分钟。 饺子: 4、将面团稍揉下,分成3大块,取一块,其他的注意保湿。将面团揉成1.5厘米直径的长条后切成10等份,每份擀成薄皮(图7),放上1-1.5大匙馅料,对折先捏拢中间,然后捏紧两边成饺子。放入铺了考盘纸的蒸笼里(图8)。 5、烧开半锅水,放上蒸笼里,大火蒸10分钟即可。 You might also like:枫糖浆鸡翼Braised chicken wings in maple syrup sauce枫糖浆鸡翼Braised chicken … Continue reading
