香辣虾仁滑蛋凉拌面(原创) by 毛毛妈 周六中午要去东边河边的一个公园与朋友们野餐,还没来得及去买菜,冰箱里只有半根黄瓜,还有胡萝卜,赶紧拿包虾放冷水里泡泡,就做个香辣虾仁滑蛋凉拌面吧,用机器新鲜压面,味道好香辣,鲜美,可口。再加上刚做的苹果戚风蛋糕,应该够了。 用料: 面条: 1:中筋面粉(All purpose flour) 3杯加盐1/2茶匙拌匀。 2:鸡蛋一只打散对水到1杯+1-2大匙。 拌汁: 3:豆豉1.5大匙斩蓉,剁椒2.5大匙,姜末1茶匙,蒜末1大匙,水1/4杯,生抽酱油2大匙,盐3/4茶匙,鸡粉1/3茶匙(可以不用),葱花2大匙。 4:橄榄油1大匙,香油1.5大匙,辣油1大匙。 配菜: 5:大虾600克,去肠去壳洗净沥水,加盐1/3茶匙,白胡椒1/8茶匙,生粉1大匙,香油1茶匙,拌匀腌20分钟备用。 6:鸡蛋3只,加盐1/3茶匙,水2大匙,绍酒1大匙,打散备用 7:大黄瓜半根,去皮洗净切片,加盐1/4茶匙腌20分钟。 8:胡萝卜1条,去皮洗净切丝,加盐1/4茶匙腌20分钟。 9:橄榄油3大匙。 注:1杯=240毫升,面是从面袋里直接舀的,没过筛。1大匙=15毫升,1茶匙=5毫升。 做法: 不沾锅放橄榄油1大匙,置炉上开大中火,放入豆豉,剁椒,姜末和蒜末(图A)炒香((图B),关火后加入剩余3和4料,拌匀就是酱汁(图C)。不沾锅洗净后,置炉上开大中火,锅干后加橄榄油3大匙,然后放入5料的虾仁翻炒至5成熟(图C),然后再加入6料打散的鸡蛋(图D),轻轻翻炒至蛋汁凝固,虾断生盛出备用。 面条:盆内放入3杯面粉,加入2料揉成硬面团,多揉一会儿。保湿醒15分钟。然后将面团分成5小块,每块依次揉成长条,用压面机压成面片,再切成宽面(图E),间中撒点干面粉防粘。大锅注入12杯水和1茶匙盐,置炉上开大中火煮滚,放入面条搅散,调中火煮4分钟至面断生(图F),捞出,过冷水沥水。面条放入大锅里,放入做好的豉椒酱汁(图G)拌匀,然后再放入炒好的虾仁鸡蛋,及腌好的黄瓜片和胡萝卜丝(图H)拌匀即可。 You might also like:【酥皮蛋挞】Braised flat beans and minced pork 肉末烧扁豆肉末烧扁豆 Braised flat beans and minced…葱油金针菇Enoki and … Continue reading
