口水鱼
口水鱼 by 毛毛妈 这个口水鱼是仿口水鸡做的,鱼肉嫩滑,味道浓厚,吃了还想吃。 用料: 1:Basa鱼片600克,洗净沥水切块。 2:盐1/3茶匙,绍酒1大匙,生粉1大匙,白胡椒1/8茶匙。 3:橄榄油1大匙,葱花1大匙,姜末1茶匙,蒜蓉1大匙,豆豉2茶匙斩蓉,花椒粉1/2茶匙,豆瓣酱1大匙(用的是台湾富记的不咸),水4-5大匙,花生酱2茶匙,芝麻酱2茶匙,腐乳汁2茶匙,万字生抽酱油1大匙,镇江香醋1大匙,盐1/6茶匙,糖2茶匙,辣椒片1大匙,香油1大匙。 4:生芝麻1大匙。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 鱼片切块放入所有2料,拌匀腌15分钟(图A)。中号锅放入大半锅水,置炉上开大火煮滚,调中火后,放入鱼片轻轻划散(图B),煮2-3分钟至鱼片断生捞出(图C)。 小号不沾锅,置炉上开大中火,加入橄榄油1大匙,接着放入葱花,姜末,蒜蓉,豆豉和花椒粉(图D)炒香。然后放入剩余3料离火拌匀(图E)。另起干净锅中火炒香芝麻 (图F),将煮好的酱汁倒在煮好的鱼片上,撒上炒香的芝麻,和一些葱花就可以上桌了。 You might also like:Braised flat beans and minced pork 肉末烧扁豆肉末烧扁豆 Braised flat beans and minced…酒酿芋头丸子Fermented sweet rice and taro balls酒酿芋头丸子Fermented … Continue reading
