【嫩烤鸡腿-Sous vide +BBQ】 by 毛毛妈 渥太华的夏天还是很舒服的。家家户户几乎天天BBQ,有时毛毛爸也做些。每次烤鸡腿都是考验,经常外面焦了,里面还没熟。 自从上次用电高压锅 的保温档,低温做出鸭肉很嫩。今天又将一包腌好的鸡腿如法炮制,最后再在BBQ的炉子上烤2分钟,又香又嫩,大家不妨试试。 用料: 1:鸡腿10个(Chicken drumsticks),洗净备用; 2:盐1茶匙,蒜蓉1大匙,糖2大匙,万字牌生抽酱油3大匙,老抽酱油1.5大匙,红腐乳1块,香油2茶匙,十三香粉1/3茶匙; 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 1、将鸡腿和2料放入,一个Ziploc塑料袋里,来回翻转让腌料均匀沾到鸡腿上,封口,冰箱里腌24-48小时,每12小时翻转一面。(图1)。 2、将腌好的鸡腿分装到两个干净的Ziploc塑料袋里,将袋中空气排出以后,封牢塑料袋口备用。 3、电压力锅内胆里加水到8杯的线,插上电源,不要盖盖子,按下【保温】档。25分钟后,将盛放鸡腿的塑料袋放入水中(图2),保温水浴38分钟。 4、捞出塑料袋,取出鸡腿(图3)。鸡腿放到BBQ炉子上,烤2分钟即可。 You might also like:【绿豆椪】【香烤三文鱼】Firm bean curd in savory garlic sauce 凉拌豆干凉拌豆干 Firm bean curd in savory gar…菊花茶Chrysanthemum tea菊花茶Chrysanthemum tea
