【Sweet rice rolls】

This is an easy Chinese dessert. Chinese people often have this dish to celebrate Chinese New Year.

Serves: 8 servings
Ingredients:
1: 1.5 cups sweet rice, 1+2/3 cups cold water;
2: 3 tbsp sugar (42g);
3: ½ cup roasted black seseme seeds (52g), 3 tbsp honey (45g);
4: ¼ cup shredded coconut (25g);
Directions:
1: Rinse rice with water and drain. Boil 1+2/3 cups cold water in a medium-sized non-stick saucepan (Picture 1). Stir and cover the lid. Cook at low heat for 40 minutes. Add 3 tbsp sugar, mix well and cool (Picture 2).
2: Place roasted black sesame seeds in a plastic bag, seal and roll with a rolling pin (Picture3). Transfer the crushed sesame seeds into a medium size bowl, then add remaining Ingredient 3) (Picture 4) and mix with a fork.
3: When rice cooled, place them on a large piece food wrap and make it into a 0.5 cm thick rectangular. Evenly put sesame seed filling on the center (Picture 5). Roll it to a roll and seal tightly with the food wrap (Picture 6).
4: Chill it in a fridge for one hour, open the food wrap and scatter shredded coconut on top of the rice roll evenly (Picture 7), press firmly.
5: Cut into 1.25cm thick slices before serving.
