金鱼饺
金鱼饺 by 毛毛妈 凑趣做了这个金鱼饺,方法很简单,孩子们很喜欢。 用料: 原色皮: 1:中筋面粉(All purpose flour) 250克(1.5杯),开水165克(3/4杯),玉米油1.5茶匙。 红色皮 2:中筋面粉(All purpose flour) 160克(1杯),开水110克(1/2杯),食用红色素10滴,玉米油1茶匙。 馅料: 3:冰冻带壳白虾半包300克,去肠,去壳洗净沥水,斩茸备用。 4:瘦猪肉馅300克(extra lean ground pork)。 5:葱花2大匙,姜末1茶匙,绍酒2茶匙,白胡椒粉1/6茶匙,盐3/4茶匙,香油1大匙,生粉1.5大匙,糖1/3茶匙,水3.5大匙,万字牌生抽酱油1大匙,香油1大匙。 其他: 6:葡萄干3大匙。 注:1杯=240毫升,1大匙(1T)=15毫升,1茶匙(1t)=5毫升。以上用量可做36个金鱼饺。 做法: 原色皮:将1料中的水缓慢倒入面粉中且用筷子不断搅拌成面絮状个(图A),稍冷和成软面团,然后加1.5茶匙油揉到光滑(图B),保湿静置30分钟。 红色皮:将2中的红色素倒入水中,然后如上和成光滑软面团(图C),保湿静置30分钟。 馅料:取一盆,放入所有的3(图D),4和5料(图E)。用一双筷子顺一个方向搅拌至馅上劲备用(图F)。 金鱼饺:分别将原色和红色面团分成2份(图G),各取一分揉捏成1.5厘米直径的条,再各分成两份,四条颜色错开并列一起(图H)。然后再揉成1.5厘米直径的条,再切成16份(图I)。取一分压扁擀成直径10厘米的皮,放上1大匙馅料(图J),对折捏起3/4段留一角开口(图K),然后捏出有三孔的形状(图L),用筷子打开三个口(图M),上面两个口各放一粒葡萄干(图N),将背部尾部面捏薄成金鱼状个(图O)。做好的金鱼饺放入铺了烤盘纸的蒸笼里,大火蒸10分钟即可。 可惜家里没有深色葡萄干,否则更像。 心得: 1:做汤面饺,面要烫透,再放少些油揉匀,面皮会绵软细腻好吃。 2:不喜欢食用色素,也可用红色的果汁,胡萝卜汁等,但汁要热开用来烫面。 You might also like:Banana Chiffon Cake【香蕉戚风蛋糕】绿茶蛋卷Matcha … Continue reading
