绿茶豆沙冰皮月饼
绿茶豆沙冰皮月饼 by 毛毛妈 有放绿茶的饼皮跟红豆沙很搭,非常好吃。这张是第二天回油后拍的,绿茶的颜色很醒目。 用料: 红豆沙: 1:红豆一袋300克,冲洗一下。 2:糖1又1/2杯,玉米油1杯,香草香精(Vanilla Extract)1茶匙。 饼皮: 3:糯米粉1/2杯(60克),粘米粉1/4杯又2大匙(40克),绿茶粉1大匙(大约8克)。 4:白糖2大匙(28克),炼奶(Condensed milk)3大匙(45克),玉米油2.5大匙(30克),牛奶180毫升(180克)。 糕粉: 5:糯米粉1/2杯。 豆沙馅: 6:红豆沙馅480克。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon。1杯=240毫升。皮料可做16个55克重的饼皮月饼。 做法: 红豆沙:锅内放水5杯和洗净的红豆,开大火煮至滚,调小火煮60分钟。稍冷后用粉碎机将豆沙打成蓉(图A)。炒锅置炉上开中小火,放下豆沙蓉炒(图B),要不断的搅拌,防止稀豆沙馅喷溅烫到,炒至快干(图C),再加2料中的糖和油(图D)炒到馅干挺,没什么水气了便可(图E),最后拌入香草香精,成品大约800克豆沙。 糕粉:中号锅置炉上开中小火,放入糯米粉1/2杯炒至微黄即可(下图A)。 冰皮月饼:用一玻璃盆,放入所有3和4料(图B),搅拌均匀(图C),放入微波炉里加1分钟,然后拿出来搅拌一下。重复这个加热搅拌过程至糯米粉熟(图D),放置冷凉。这时将480克豆沙分成16份,每份搓成30克的球(图E)待用。 取一大块食物保鲜膜,手上稍涂点玉米油,将冷凉的绿茶面团拿到保鲜膜上,隔着保鲜膜将面团揉透(图F)。面团分成16份(每份大约25克),每份面团放入保鲜膜里,隔着保鲜膜压扁面团,然后包上一个豆沙收口(图G)。拿出绿茶豆沙冰皮月饼柸,表面沾上糕粉,放入小号月饼模(55克一个)里压实(图H),翻转月饼模,然后上下左右都敲一下,就可以轻松脱模了(图I)依次做完所有的月饼,用刷子轻轻刷去表面的糕粉即可食用。 You might also like:儿时回忆-油盒子【酥皮蛋挞】【Baked Spring Rolls with Pork and Shrimp】【虾肉春卷】无糖葱香蛋糕Sugar … Continue reading
