好吃的爬梯菜–【肉抱蛋】 by 毛毛妈 大家一定要试试这个菜,可以带去爬梯。用了鹌鹑蛋,先卤好,外面再包上肉糜,如果不怕起油锅,在油里炸好,再勾个芡汁,真是非常美味。 用料: 1:鹌鹑蛋一盒18个,水3杯,盐1.5茶匙,糖2茶匙,万字生抽酱油2大匙,金兰老抽酱油2大匙,丁香2粒,八角1粒,五香粉1茶匙,茶叶1大匙; 2:新鲜马蹄(荸荠)6个,去皮洗净备用; 3:精瘦猪肉馅550g(Costco买的 extra lean ground pork),葱2根切碎,姜末1.5茶匙; 4:盐1茶匙,鸡蛋1只,生粉2大匙,鸡精1/4 茶匙,绍酒1大匙,万字牌生抽酱油1大匙,金兰老抽酱油1大匙,水2大匙; 5:玉米油或橄榄油4大匙,葱1根切段,姜片2片; 6:糖4大匙,镇江香醋3大匙,万字牌生抽酱油1大匙,盐1/3茶匙,鸡精1/4 茶匙,水1/2杯; 7:生粉1茶匙,水1.5大匙拌匀,香油2茶匙。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 teaspoon,1杯=240毫升。 做法: 1、鹌鹑蛋放一锅里,加2杯水,置炉上开中火,煮至滚,调中小火焖煮1.5分钟后,冲冷水,剥壳备用(图1)。 2、按 五香茶叶蛋的做法,将所有剩余1料放锅里煮滚,冷凉后放入剥壳的鹌鹑蛋,过夜后捞出备用。 3、将马蹄(图2)切细丁,同3和4料放一盆内(图3),用一木勺顺一个方向搅拌至馅上劲(图4)。 4、不粘锅放入油3大匙,左手沾上水(这样肉馅不沾手),用一汤勺沾下水取一份肉馅(分成18份)放入左手掌,包入一颗卤鹌鹑蛋,用勺反复与左手掌和勺之间搓成肉丸后入锅内(图6),开大中火煎黄(图7)盛出,如此做好剩余的肉丸。 5、原锅弃去油洗净锅置炉上开中火,放入1大匙油炒香4料的葱和姜(图8),然后依次放入6料,放入煎好的肉抱蛋兜匀,煮4-5分钟,淋下7料拌匀出锅。 爱心分享:如是要请客,可以用半锅油依次将肉抱蛋炸好,再放汁里烧煮,这样肉抱蛋会非常圆,成品更漂亮。 You might also like:枫糖浆鸡翼Braised chicken wings in maple syrup sauce枫糖浆鸡翼Braised … Continue reading
