沙茶洋葱火腿包
沙茶洋葱火腿包 by 毛毛妈 我还是更喜欢中式口味的面包,这个沙茶味道很香。 汤种: 1:中筋面粉2大匙加水1/2杯和盐1/8茶匙,在小碗中混合均匀,放入微波炉中加热20秒,取出搅拌均匀,再加热20秒,取出再搅拌,看情况再加热15秒,然后10秒左右,当搅拌时面糊出现一圈一圈的纹路即可。 取出盖上保鲜膜,凉后放冰箱冷藏过夜。 发面: 2:蛋清1只,动物性鲜奶油(whipping cream)1/2杯,牛奶1/2杯加1大匙,白糖1大匙,玉米油3大匙,中筋面粉3杯 (All purpose flour),快速发酵粉(Fast Rising Yeast)1.5茶匙。沙茶洋葱火腿馅: 3:洋葱2个250克,去皮,水冲洗后切丝。 4:西式火腿(Cooked Ham)300克,切丝备用。 5:葱花2大匙。 6:橄榄油1.5大匙,盐1/4茶匙,黑胡椒1/4茶匙,沙茶酱2.5大匙。 蛋液: 7:蛋黄1个,加牛奶1大匙,拌匀。 做法: 发面:先将汤种放入面包机里,然后将2料依次放入面包机内(图A),面包机放至揉面档,开启。由于量水每个人看得可能有些不同,面包机刚启动时,要观察下看能不能和成大块面团,如是面团太希,可分次加点面粉到刚好和成面团,中式面包关键要和软面,这样面包才柔软好吃。 洋葱火腿馅:不沾锅放橄榄油1.5大匙,置炉上开大火,放入洋葱丝翻炒(图C)至软,加入盐,黑胡椒和火腿丝,再炒半分钟。然后放入沙茶酱炒匀离火,冷凉成馅(图D)。 面包:两小时后,案板上撒点干粉,将发好的面团稍揉下,排气后分成16份,每份揉成中间薄边厚的圆饼状(图E)。均匀放上沙茶洋葱火腿馅,和少许葱花(图F) 将做好面包坯放入铺了锡箔纸的烤盘上入烤箱,醒30分钟到1个钟头左右。刷上蛋液,将烤盘放入预热至350F/170摄氏的烤箱内,烤15分钟,再放Broil档1-2分钟上色即成。各家的烤箱不同,注意温度及时间。面包表面不烫手装入密封塑料袋里。 You might also like:【Baked Spring Rolls with Pork and … Continue reading
