鲜肉生煎包
鲜肉生煎包 by毛毛妈 鲜肉生煎包,我们家的两个男同学都非常喜欢。我稍微加了点小青菜苗,多吃点菜哈。 用料: 1:中筋面粉3 1/4杯 (All purpose flour,3 1/4cups),泡打粉(Baking powder)2茶匙,拌匀。 2:温水1.5杯,糖1大匙,快速发酵粉2茶匙,面粉1大匙,搅拌均匀。静置10分钟。 3:青菜苗250g,洗净。把青菜苗在开水中烫一下,凉水冲凉后,切小粒稍微挤去多余的水。 4:香菇5朵,用水泡软,洗净切小粒。 5:精瘦猪肉馅450g(Costco, extra lean ground pork)。 6:葱2根切碎,姜末1.5茶匙。 7:鸡蛋1只,生粉1.5大匙,盐1茶匙,万字牌生抽酱油3大匙,糖1茶匙,香油2大匙,鸡精1/3茶匙,白胡椒1/8茶匙,水1/4杯。 8:熟芝麻,橄榄油,适量。 做法: 盆内放1和2料揉成软面团。揉面时面团粘手,可往手上涂点玉米油 (10毫升)。放在暖和的地方保温,等到面团发至原来的两倍大。 另取一盆,放3,4,5,6和7料拌匀。用一木勺顺一个方向搅拌至馅上劲。这样拌好的馅,汁多肉嫩又健康些。 把发好的面团分成24块,每份赶成薄皮,加1.5大匙馅料包成包子。将做好包子坯放入铺了层纸巾的烤盘上,放入烤箱内醒20-40分钟。煎锅放1大匙橄榄油,将醒好的包子坯放入煎锅。将煎锅置炉上开大火,加3/4杯水,盖上盖。水开后,转中火(电炉放5)煎至水快干(听到吱吱响声)。转中小火(电炉放4)煎3分钟,小火(电炉放最小火)再煎2分钟。离火等1-2分钟再揭盖撒上芝麻和葱花。 You might also like:Chenpi Chicken Wings 陈皮鸡翅 陈皮鸡翅 Chenpi Chicken WingsBraised fish in … Continue reading
