香菜素馅蒸(煎)饺 作者:毛毛妈原创 冰箱里还有一把香菜,我和毛毛爸都爱吃的,可惜儿子毛毛对它是敬谢不敏。今天有时间,烫了面,共做了24个香菜素馅饺,一半蒸,一半煎,非常好吃。毛毛爸大概是太久没吃烫面饺,一下吃了12个,吼吼,很久没见他这样吃东西了 用料: 饺皮: 1:中筋面粉(All purpose flour) 3杯,没过筛,加盐1/2茶匙拌匀。 2:开水1 1/2,菜油2大匙。 馅料: 3:萝卜400克,去皮洗净切片,开水中煮几分钟后,沥水冷凉切细粒后挤干水。 4:豆腐2块,洗净切薄片备用。 5:鸡蛋3只加盐1/3 茶匙,水1大匙搅拌均匀。 6:香菜一把(100克),洗净沥水切末。 7:白胡椒1/4茶匙,鸡精1/4茶匙,生粉1.5大匙,盐1 1/3茶匙,香油2大匙。 8:橄榄油3大匙。 蒜蓉醋汁: 9:小红辣椒1个,洗净去仔切末。 10:橄榄油1大匙,蒜蓉1.5大匙。 11:万字牌生抽酱油3大匙,冷开水3大匙,镇江香醋1大匙,糖2茶匙,香油1大匙。 做法: 先看看要用的主料。 馅料:煎锅内放橄榄油1大匙置炉上,开大中火放入豆腐片煎至两面黄捞出,冷凉切丁。原锅加油2大匙开中火,放入打散的鸡蛋炒熟,冷凉切丁。取一盆,放入萝卜丁,豆腐丁,鸡蛋丁,香菜末(图B)和7料拌匀成馅(图C)。 蒜蓉醋汁:炒锅加橄榄油1大匙开中火放入蒜蓉和辣椒末(图D)炒香离火,然后拌入所有的11料即可。 饺皮:边用筷子搅边将开水倒入面粉里,继续搅拌到成团。稍冷接着倒入菜油2大匙,将面揉至非常均匀(图E),盖上湿布醒30分钟。 饺子:把醒好的面团分成24份(暂时不用的面块要盖上湿布保湿),每份擀成薄饼,包上2大匙馅料捏成饺子(图F)。将做好的饺子坯放入铺了湿布的蒸锅内。大火蒸10分钟即可。 近点可看到皮很均匀。 掰开看看,咬一口好好吃。 再放点蒜蓉醋汁。 更美味~ 做好的饺子还可放入煎锅置炉上开大火,加3/4杯水,和菜油1大匙,盖上盖。煎至水快干,转中火煎黄即可。很香很好吃。 … Continue reading
