肉燕
肉燕 by 毛毛妈 肉燕是福州的名菜之一,燕皮是用瘦肉和山芋粉锤至而成。记得二十多年前跟LG回福州探望他的外公外婆,进门第一碗菜就是这个肉燕,非常好吃。上次公公婆婆回福州玩,特地买回燕皮寄给我们,今天可以让LG解解馋。 用料: 1:福州燕皮适量。 2:精瘦猪肉馅100g(Costco, extra lean ground pork)。 3:葱花1大匙,姜末1茶匙,生粉2茶匙,盐1/6茶匙,糖1/6茶匙,鸡粉1/6茶匙,香油1茶匙,万字牌生抽酱油2茶匙,水1大匙。 4:自制鸡汤4杯(无盐),鱼露1大匙,盐1/3茶匙,葱花1茶匙。 做法: 取一盆,放入肉馅及调味料3(图A),用一双筷子顺一个方向搅拌到馅上劲为馅(图B)。燕皮是这个(图C),用剪刀顺着燕皮的折子剪开,取一张放入成水的盆里(图D)泡一下,放上1茶匙的肉馅(图E),包起来(图F),以上做好所有肉燕。 中号锅放入鸡汤(图F),置炉上开大火,水滚放入包好的肉燕(图E),汤滚后调小火,然后加入4料中的鱼露和盐,煮3-5分钟,撒上葱花(图F)即可盛出食用。 You might also like:【Baked Spring Rolls with Pork and Shrimp】【虾肉春卷】Chenpi Chicken Wings 陈皮鸡翅 陈皮鸡翅 Chenpi Chicken Wings蚂蚁上树Vermicelli and ground pork stir fry in … Continue reading
