【黄金如意卷】 by 毛毛妈 买到新鲜的马蹄,家里又有白虾,做了这个黄金如意卷,毛毛和毛毛爸都很喜欢。过节做一盘带去爬梯,养眼又美味。 用料: 1:新鲜马蹄3个。 2:冰冻白虾350克,去皮肠洗净沥水,虾仁只有200克了。 3:蛋清1大匙,葱2条洗净切茉,姜蓉1茶匙,绍酒1茶匙,盐2/3茶匙,生粉1.5茶匙,白胡椒1/6茶匙,香油1.5茶匙。 4:3料中剩余的蛋清蛋黄再加1个鸡蛋,盐1/4茶匙,生粉1茶匙,水2茶匙。 5:橄榄油1大匙。 6:寿司紫菜一张(Roasted Seaweed)。 7:生粉2.5茶匙。保鲜膜一张。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 马蹄(图A)削去皮洗净切小小粒(图B)。虾仁(图C)斩成蓉(图D)。将马蹄丁虾肉及所有3料放一盆里(图E),用筷子搅拌上劲备用(图F)。 鸡蛋加4料中的盐,生粉和水(图G)放一小盆里,用叉子打散均匀。不粘锅,加橄榄油1大匙,置炉上开大火,油温后调中小火,倒入蛋液,转动锅让蛋液均匀盖满锅底(图H),煎成蛋皮捞出放案板上,切去上下大约1厘米边(图I)。蛋皮上均匀抹上1.5茶匙生粉(图J),然后放入60%的虾肉馅抹均匀(图K),盖上紫菜(图L)。紫菜上再涂上1茶匙生粉,放入剩余虾肉馅抹匀(图M),上下两边往中间卷(图N)起来。用保鲜膜包起黄金如意卷柸,叠口朝下(图O),放入蒸笼里,大火蒸20分钟。去掉保鲜膜,切片食用。 You might also like:【酥皮鲜肉月饼】Braised daikon and dried shrimps 虾干烧萝卜虾干烧萝卜 Braised daikon and dried shrimp…高升牛肉Braised beef in vinegar soy sauce高升牛肉Braised … Continue reading
