香酥炸虾
香酥炸虾 by 毛毛妈 香酥炸虾,孩子们很喜欢的菜。 用料: 1:冰冻带壳虾600克(白虾),去肠,去壳身皮洗净沥水备用。 2:绍酒1茶匙,白胡椒粉1/8茶匙,盐1/3茶匙,葱花1大匙,香油1茶匙,生粉1大匙。 3:蛋黄1个,水1/2杯,绍酒1茶匙,盐1/4茶匙,白生芝麻2大匙。 4:低筋粉1杯。 5:玉米油或菜油2杯。 做法: 虾身浅浅划几刀,拉直身(图A),放入所有2料(图B),拌匀腌20分钟。取一小盆,放入3料里的蛋黄,水,绍酒,和盐(图D)拌匀。低筋粉过筛(图E)然后取三分之二,放入水蛋液里(图F),轻轻搅拌均匀。 然后放入白芝麻拌匀(图G)。中号锅,置炉上开中火,放入玉米油2杯中火,油热后,取腌好的虾,放入剩余干面粉里沾上层薄粉,然后放入蛋面糊里,挂上一层薄桨,放入油锅里(图)炸至虾身硬挺,微变色,捞出空油,乘热吃,很香酥。 心得: 1:做蛋面糊时不要过度搅拌,面粉量要酌情加减,面糊不可太稠,面糊用搅拌器拎起来,还能连成线往下滴。 2:要等油热后,再炸,一般虾2分钟左右就好了。 3:虾一次吃不完,可放入375F烤箱烤10分钟,就会又酥又香了.
