玉米面蛋糕/发糕
玉米面蛋糕/发糕 作者:毛毛妈原创 不知该叫这个甜品是蛋糕还是发糕,哈哈。偶用了鸡蛋来助发,主要用了玉米面粉和少量中筋面粉,然后蒸出来的。这个蛋糕/发糕是又软又萱,不掉渣又比较健康,非常好吃。星期六一下做了两个,带去小组大家都喜欢。放塑料盒密封室温保存,第二、三天吃,都没加热,还是好松软,强烈推荐。 用料: 1:鸡蛋4个,白醋1茶匙,糖1/2杯,香草香精1茶匙,玉米油2大匙。 2:玉米面粉(Corn flour)2/3杯,中筋面粉1/4杯(All purpose flour) 面是直接从面袋里舀的,加3/4茶匙泡打粉(Baking Powder)拌匀。 3:葡萄干1/4杯(可以不用)。 做法: 玉米面粉一定要用Corn Flour千万别用Cornmeal,粒太粗。取一盆放入鸡蛋和白醋,用搅拌器高速打5分钟,然后边高速搅拌边将糖(喜欢更甜的筒子,可放2/3杯)分三次放入打至发白浓稠,接着到入香草香精和玉米油2大匙再打2分钟(图B)。再将2料(图A)分三次过筛入打发的蛋糊里(图C),用橡皮刀从上往下轻轻拌匀(Folding motion)。倒入直径22厘米铺了烤盘纸的玻璃烤盘中,均匀撒上葡萄干(图D)。 上蒸笼,等蒸锅里水开后用大火蒸15分钟,稍冷撕去烤盘纸,切块食用。多余的蛋糕/发糕放塑料盒密封保存,若是两三天内吃完,不用放冰箱。 太开心了,蛋(发)糕非常松软。 第二天都没加热,还是好松软。哈哈,唯一的遗憾是葡萄干太重全沉底了。 You might also like:儿时回忆-油盒子做出完美的–低脂轻乳酪蛋糕绿茶蛋卷Matcha biscuit roll绿茶蛋卷Matcha biscuit roll无糖葱香蛋糕Sugar free chiffon cake无糖葱香蛋糕Sugar free chiffon cake
