红豆绿茶戚风杯蛋糕 by 毛毛妈 家里经常要做点蛋糕来吃,我还是最喜欢戚风体的蛋糕,柔软润湿好吃。加点煮好的蜜红豆和抹茶粉也很搭。虽然纸杯蛋糕烤完不能倒扣,但纸杯可以拉住蛋糕,也不会塌陷下去。唯一的遗憾是这个绿茶粉做出来颜色不是很绿。 用料: 1:低筋面粉(Cake flour) 75克(1/2杯直接从面袋里舀的),泡打粉(Baking Powder)1/2茶匙,绿茶粉1大匙,用叉子拌匀备用。 2:蛋白4个,白醋1/2茶匙或塔塔粉1/3茶匙,糖51克(1/4杯)。 3:蛋黄4个,糖(42克)3大匙,玉米油(36克)3大匙,香草香精(Vanilla Extract)1茶匙,牛奶2大匙,蜜红豆1/4杯。 4:蜜红豆2大匙。 5:大号蛋糕纸杯12个 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: 用两个干净无油无水的盆分别盛蛋白和蛋黄(图A)。蛋白加白醋用搅拌器高速打几分钟到发,接着加入糖1/4杯再打2分钟(图B)至硬挺。将1料用叉子搅拌均匀(图C)待用。接着用搅拌器高速打蛋黄1分钟,加3料里的糖打到糖溶解。然后放入3料里的油,香草香精和牛奶打匀,然后加入1料(图D),低速打1-2分钟均匀即可(图E),接着拌入蜜红豆1/4杯。将先前打发的蛋白1/3放入蛋黄糊里,用橡皮拌匀(图F)。然后将蛋黄糊到入打发的蛋白里(图G),用橡皮刀从上往下轻轻翻拌均匀(图H)。 然后将面糊均匀分到12个大号蛋糕纸杯里,上面均匀撒上4料的蜜红豆(图I)。将盛纸杯的烤盘再放到一个大烤盘里,然后放入预热至340F/170oC的烤箱内,烤25分钟左右至表面金黄。稍冷后蛋糕密闭保存。 掰开看看,内部组织非常细腻,口感润湿柔软。 爱心分享:蜜红豆可以自己做:锅内放水2杯水及洗净的红豆1/2杯,开大火煮至滚,调小火煮50分钟至外皮有点破,然后加入白糖3大匙和蜂蜜1.5大匙煮到汁浓快干时离火。 You might also like:Braised fish in savory soy sauce 红烧鱼尾红烧鱼尾 Braised fish in … Continue reading
