【深牛油蓝莓方块糕】–Bluberry& Brown Butter Squares by 毛毛妈 今天做了这个深牛油蓝莓方块糕,大受毛毛的赞赏。熬煮过的牛油有特别的香味。上层配有核桃仁的碎酥层,趁热吃,非常棒。 用料: StreuselTopping上层: 1:中筋面粉(All purpose flour)1/3杯(55克),碎核桃仁1/3杯(48克),红糖(Brown Sugar)1/4杯(43克),肉桂粉(Ground cinnamon)1茶匙; 2:牛油1/4杯(60克); 方块糕: 3:牛油1/3杯(75克),白糖1/3杯(70克),红糖(Brown Sugar)1/2杯(86克); 4:中筋面粉(All purpose flour)1杯(160克),泡打粉(Baking powder)1茶匙;盐1/8茶匙,用叉子拌匀备用; 5:鸡蛋一个打散;牛奶1/3杯(78克);香草香精(Vanilla extract)1茶匙; 6: 蓝莓或冰冻1杯 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。 做法: StreuselTopping上层: 1、先将所有1料放入盆中(图1)拌匀备用(图2)。室温软化黄油放一盆里,用搅拌器高速打几分钟到发(图3),接着加入拌匀的1料,用中速打成肉糜样(图4) 备用。 方块糕: 2、将3料里的牛油放入一中号锅里,置炉上开中火,将牛油熬煮(图5)约6分钟至微黄焦香(图6)。 3、熬煮好的黄油冷凉后(可放入冰箱加速冷凉过程),放入3料里的白糖和红糖,用用搅拌器高速打几分钟(图7),然后放入4料里一半的混合好的面粉,及5料里一半的鸡蛋液及一半牛奶(图8),用中速打匀。最后放入剩余的4和5料,再中速刚刚打匀(图9)。 4、然后将面糊倒入22×22厘米的玻璃烤盘里(图10,请忽略图中的更大盘子,因为我做双份带去教会聚餐。),用塑料刀抹平,然后均匀撒上6料(图11),最后均匀撒上碎酥层(Streusel Topping)(图12),将烤盘放入提前预热至375F/190oC的烤箱内,烤40分钟。切块趁热食更棒。 … Continue reading
