奶油蛋糕卷
奶油蛋糕卷 作者:毛毛妈 参考了喵呜子的戚风鲜奶油蛋糕卷 ,为了偷懒省点事,做法稍有不同,多谢喵呜子。 用料: 1:蛋黄3个,鸡蛋1个,朗姆酒(rum)1茶匙,糖1/4杯,玉米油1/4杯,牛奶1/4杯; 2:中筋面粉(all purpose flour)6大匙,面是直接从面袋里舀的,玉米淀粉(corn starch)3大匙,加3/4茶匙泡打粉(baking powder)拌匀; 3:蛋清3个,白醋1/2小匙,糖1/4杯; 4:忌廉粉(Kraft Dream Whip Topping Mix)一包42.5克,牛奶1/2杯,香草香精1/2茶匙(提示:奶油打发后够做两个蛋糕卷的量); 5:奇异果(猕猴桃 kiwi fruit)一个,去皮切丁。 注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。 做法: 1、用两个干净的盆分别盛3料中的蛋清(图A),和1料中的蛋黄及一个全蛋(图B)。蛋清加1/2小匙白醋用干净的打蛋器(handheld mixer)高速打几分钟,然后边打边将1/4杯糖分两次放入,再打2分钟至硬挺(图C)。 2、用同一个搅拌器高速打蛋黄、一个全蛋及1茶匙朗姆酒3分钟,然后边打边将糖1/4杯分两次放入,打至发白浓稠。接着倒入玉米油打2分钟,再倒入牛奶,用中速打半分钟至均匀(图D)。 3、然后将2料分三次过筛加入蛋黄糊里(图E)拌匀。将先前打发的蛋白的1/3放入蛋黄糊里(图F),用橡皮刀拌匀。然后将蛋黄糊倒回剩余的2/3蛋白里,用橡皮刀顺盆边沿滑下,翻底(图G)铲起(图H),重复翻拌动作(folding motion)轻轻拌匀,这样蛋糕体才细腻。 4、将面糊倒入铺了烤盘纸的25×38厘米烤盘中(图I),放入已预热至350F/175C的烤箱内,烤15分钟。 5、待蛋糕凉5分钟,将蛋糕倒扣到干净的毛巾上(tea towel)(图J),撕掉烤盘纸,从短的一头将蛋糕连毛巾卷起来,冷凉(图K)。 6、取一干净小盆,放入所有4料,用打蛋器打发至硬挺。取一半的奶油拌入奇异果丁,将冷凉的蛋糕打开,抹上一层打发的奶油馅,留空约1/5。再将蛋糕卷起,盖上保鲜膜,放冰箱冷藏30分钟定型后,切片食用。 蛋糕非常软,跟华人超市里卖的很像。 … Continue reading
