【菠菜饼】
【菠菜饼】 by 毛毛妈 菠菜饼这次用冷水和的面,稍微有点筋道,很好吃。 用料: 菠菜馅: 1:菠菜700g,去根洗净备用; 2:干虾米2大匙,水泡发沥水斩碎备用; 3:特大鸡蛋2个加水2茶匙和盐1/3茶匙打散拌匀,油1.5大匙; 4:橄榄油1大匙,葱3根切碎,姜末2茶匙; 5:香油2大匙,生粉1大匙,盐3/4茶匙,鸡粉1/4茶匙,十三香1/4茶匙; 饼皮: 6:中筋面粉 (All purpose flour) 2杯(360克); 7:水3/4杯+3茶(185克); 其他: 8:玉米油5×5茶匙。 注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。以上材料共作18个菠菜饼。 做法: 1、菠菜馅:菠菜放开水里烫1分钟(图1),捞出后冲冷水。切丁用纱布隔去汁(图2)放入一盆里待用。 2、不粘锅加1.5大匙油,置炉上开大火,放入打散的鸡汁煎成蛋皮(图3)盛出,切小丁备用。原锅加橄榄油1大匙,炒香4料的葱花姜茉和2料虾米丁(图4),盛出待用。 3、菠菜丁先拌入5料里的香油,然后放入鸡蛋丁和炒好的葱姜虾米丁,放入剩余5料拌匀即为菠菜馅。 4、面团:6料面粉放入一盆里,倒入7料的水(图6)柔成光滑面团(图7)。把面团分成2份(暂时不用的面块要盖上湿布保湿),每份揉成1厘米直径长条,切18等份(图5)。 5、菠菜饼:每小块面团压扁,擀成10厘米直径的薄饼(图6)。放2大匙馅料(图9),盖上另外一张饼皮(图10),捏紧边。依次做完所有的饼。 6、不粘锅加玉米油1茶匙,置炉上开大中火,放入4块菠菜饼(图11),两面煎微黄(图12)即可。 You might also like:女人爱自己–【心太软】【Purple Marble Tang Yuan – Glutinous Rice … Continue reading
