【紫薯面包】
【紫薯面包】 by 毛毛妈 用了汤种北海道面包做面包体,加上紫薯馅,太好吃了,要试试哦。 用料: 汤种: 1:中筋面粉(All purpose flour)2大匙(21克),水1/2杯(120克): 面包: 2:鸡蛋1只,液体鲜奶油(whipping cream)1/2杯(118克),牛奶1/2杯+1大匙(134克),白糖1/2杯(105克),奶粉2大匙(11克),中筋面粉 (All purpose flour) 3杯减2大匙(475克),面筋粉 (Wheat Gluten)3大匙(28克),快速发酵粉(Fast Rising Yeast) 2茶匙; 3:黄油(Butter)1.5大匙(25克)室温软化,玉米油1.5大匙; 紫薯馅: 4:紫薯1个340克,去皮切块备用; 5:白糖1/3杯(70克),炼乳半罐4大匙,玉米油2大匙; 其他: 6:蛋黄1个加2茶匙水打散备用。 注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。以上材料做16个紫薯面包。 做法: 汤种: 1、将1料放到小碗中混合均匀,放入微波炉中加热25秒,取出搅拌均匀,再加热15秒,取出再搅拌,看情况再加热10秒,然后10秒左右,至面糊状。盖上保鲜膜冰箱冷藏过夜。 2、发面:先将汤种放入面包机里,然后将2料里的液体材料放入面包机内,最后放干料,面包机放至揉面档,开启。面包机启动后,刚和成面团时,加入熔化的黄油和玉米油,继续揉面过程(图1)。 3、紫薯馅:取出电压力锅附带的支架,放入内胆里,加水到2杯的线。紫薯块放入一碗中,再将放在支架上(图2),盖上盖子,排气阀放置密封位置,选【蒸】档15分钟,启动程序。紫薯蒸好后等5分钟放气,打开盖子,拿出蒸好的紫薯块。 4、将紫薯块及5料放入不粘锅,压碎搅拌均匀(图3),中火将馅炒干些成浓稠状即可(图4)待用。 5、紫薯面包:面团发好后(图5),拿出稍揉下,排气后分成2份,每份擀成长25厘米宽16厘米的长方形饼,取一半紫薯馅抹平在饼皮上(图6),用刀横向切成8长条。每条变成8字花(图7-9),放入铺了烤盘纸的烤盘上。如上做好另一半面团。放入烤箱内,醒发30分钟到1个钟头左右到1.5-2倍大。 6、刷上蛋液(图10),将烤盘放入预热至 350F/170摄氏的烤箱内,烤16分钟上色即成。面包稍冷就可食用了。 … Continue reading
