【Red bean pancake】

This is very soft red bean pancake that my family loves. The key is to make a very soft dough. The AirGo cooker has “Crepe/Naan” function for a convenient cooking. With a coupon of maomao25 for $25 off.

Ingredients:
1: 1+1/2 cups all-purpose flour (240 g), unsifted;
2: 1cup-1.5 tbsp luck warm water (220 g), 1/2 tsp sugar, 1 tsp fast rising yeast ;
3: Red bean paste 6x 2 tbsp, see Moon cakes on how to make red bean paste yourself;
4: 1 tbsp avocado oil .
Directions:
1: Combine all ingredients of Ingredient 2) in a container, mix well and let it stand for 5-10 minutes (picture 1 right). Pour this yeast water mixture into the Ingredient 1), use a pair of chopsticks and stir to form a very stick dough (picture 2).
2: Cover with a damp cloth and set aside in a warm place until it doubles in volume. (Picture 3). Flour the working surface, scape out the dough and knead a couple of times and divide into 6 equation portions (Picture 4).
3: Roll each portion to a ball and press down to 12 cm diameter circle, add 2 tbsp red bean paste (Picture 5) and seal it (Picture 6). Repeat for the rest portions (Picture 7). Note: the dough is very sticky, use dry flour to help making the pancake. Press down a bit, cover with food wrap and let them rest for 10 minutes (Picture 8).
4: Plugin the 【AirGo】 cooker and turn on the power. Use “Function” to select the “Crepe/naan” program, after the preheat done, brush the pan with some cooking oil, arrange pancakes inside (Picture 9), close the lid. Adjust temperature to 400F, then press “Start”. and let the program continue.
5: After cooking for 5-6 minutes, open the lid, brush the pancakes with cooking oil and turn over (Picture 10), close the lid and let the program continue to cook the other side.
6: When it is done, take out pancakes and place them in a bowl (Picture 11), cool for a few minutes before serving.
