这个菜过去做过,那次用的是花椒粒炒盐,自从买到很香的花椒粉,发现用花椒粉更好。正好两个礼拜前Farm Boy 大鸡腿On Sale0.99$/磅,加上天气还偏冷,就买了一大盘大鸡腿回来,做风鸡

 

161 风鸡腿 

用料:
1:大鸡腿8只2680克,洗净沥水备用。

2:花椒粉2大匙,海盐5大匙。

3:葱一条切段,姜3-4片。 做法:花椒粉与盐拌均匀(图A),均匀涂抹到鸡腿上(图B),放入密闭盒里冰箱里腌3-4天,间中翻翻。

245 风鸡腿 

然后用棉线绳将鸡腿梆起(图C),放阴凉通风处晾5-7日至外皮干爽(图D)。取两只风干的鸡放入水中泡(图E)3小时,洗净鸡腿放入盛葱段和姜片的盘里,入笼大火蒸20分钟(图F),冷后斩块即可食用。
