金银蛋饺
金银蛋饺 by 毛毛妈 用料: 1:瘦猪肉馅100克(Costco, extra lean ground pork)。 2:生粉2茶匙,盐1/4茶匙,糖1/2茶匙,素易鲜1/4茶匙,白胡椒粉1/8茶匙,香油2茶匙,万字牌生抽酱油1大匙,水2大匙,葱花2大匙,姜末1茶匙,香油1大匙。 3:鸡蛋白3个,盐1/4茶匙,水2大匙。 4:鸡蛋黄4个,盐1/4茶匙,水3大匙,生粉2茶匙。 5:清鸡汤1/2杯,盐1/8茶匙,生粉1.5茶匙加2大水拌匀,香油1茶匙,葱花2茶匙。 做法: 馅:取一盆,放入1和5料拌匀。用筷子顺一个方向搅拌至馅上劲(图A)。 蛋皮:3和4料(图B),各用筷子打散搅匀。不沾煎锅放油1茶匙,置炉上开中火,将蛋汁各煎成2毫米厚的蛋皮(图C)。 蛋饺:用7厘米直径的圆形模切成蛋饺,中间放上2茶匙肉馅,对折边捏紧(图D)。摆盘上,入笼大火蒸7分钟,蛋饺换到一干净盘上。小锅放入清鸡汤1/2杯,置炉上开大火煮滚,下余下5料拌匀煮成芡汁淋到蒸好的蛋饺即可。 You might also like:【紫薯广式月饼】【Baked Spring Rolls with Pork and Shrimp】【虾肉春卷】【Dim Sum & Desserts 中式点心】 is released!毛毛妈厨房精选【中式点心】上架了高压锅版-鲜虾酿豆腐Shrimp Stuffed Tofu高压锅版-鲜虾酿豆腐Shrimp Stuffed Tofu
