【云石汤圆】

自从在我们村能买到紫薯,它成了我们家餐桌上的常客啦,做杂粮粥、面包和中式点心都用得到它。这次用紫薯来做云石汤圆,色彩漂亮又香甜好吃。
黑芝麻馅:
1:熟黑芝麻1/4杯(27克),红糖2大匙(18克),生粉1大匙(9克),
2:玉米油1.5茶匙,蜂蜜1.5大匙;
面团:
3:紫薯半个95克(削去皮后是80克),水2大匙;
4:糯米粉1/3杯(47克),温水1/4杯(60克);
5:糯米粉1杯(141克),温水1/2杯(120克);
酒酿汁:
6:酒酿1杯(做法见零失败做【甜酒酿】),水4杯,糖1/4杯。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、将买来的熟黑芝麻放一塑料袋里,封口后用擀面杖将芝麻碾碎(图1)。碾碎的芝麻连同1料里的红糖和生粉放入一碗中先拌匀,然后放入2料里的油和蜂蜜(图2),用勺子拌匀(图3),分成12等份待用。
2、紫薯去皮后切小块,加2大匙水,盖上保鲜膜(图4),在微波炉里叮2-3分钟至熟。用勺子碾碎紫薯,然后放入4料(图5),揉成紫薯面团(图6)。
3、所有5料放一小盆里,揉成白面团(图7)。案板上放一张保鲜膜,将白面团揉成长20厘米的长条,放到保鲜膜上。再盖上另一张保鲜膜,用擀面杖擀成15厘米宽的长方形(图8)。
4、将紫薯面团也擀成同样大小的长方形(图9),然后揭掉上层保鲜膜,轻轻将紫薯面片放到白面片上(图10)。隔着下层保鲜膜,小心将面片从下往上卷成长条(图11、12)。
5、去掉保鲜膜后切成12等份(图13),每份在案板上压扁后,用手指捏出凹槽。放入1份黑芝麻馅(图14),封口包紧成球状,两手轻轻揉成光滑的汤圆(图15)。
6、中号锅内放入大半锅水,开大火煮至滚。将包好的汤圆放入锅内(图16),水滚后,关小火再煮8-10分钟。另起一小锅放入所有6料,开大火煮至滚(图17)。再用小火煮5分钟后,捞出汤圆放入酒酿汁即可(图18)。
