家常炒年糕2 【家常炒年糕】
用料:
1:猪里脊肉130克,洗净切片;
2:盐1/4茶匙,生粉1.5茶匙,老抽酱油1茶匙,水1大匙;
3:橄榄油2.5大匙,葱花1大匙,姜蓉1茶匙,蒜蓉2茶匙;
4:胡萝卜半个60克,去外皮切片备用;
5:干年糕片1包320克,冷水泡24小时沥水备用;
6:盐3/4茶匙,头抽酱油1大匙,白胡椒1/6茶匙,清鸡汤1杯;
7:上海青菜450克洗净切段备用;
8:香油2茶匙。

注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。

做法:
1、头一天,猪肉切片片拌上所有2料(图1),用手抓捏匀(图2),保湿冰箱过夜。

2、不粘锅,置炉上开大中火,放橄榄油1.5大匙置炉上,放入肉片(图3)炒至八成熟,捞出备用。

3、原不粘锅再加橄榄油1大匙,炒香6料里的蒜蓉,姜蓉和葱花(图4),放入4料胡萝卜片翻炒片刻(图5),加泡好的年糕片,翻炒几下。
4、依次放入6料,炒至汁干年糕软身(图7),然后放入青菜,炒至菜断生。最后放入炒过的肉片兜匀,淋下8料香油拌匀即可。
