【干贝烩豆腐】

家里买的小干贝,质量不错,做个烩豆腐,很美味下饭。
用料:
1:老豆腐一盒700克,小干贝1/2杯用水泡发待用;
2:橄榄油3大匙,蒜蓉1大匙,姜末1.5茶匙,葱花1大匙;
3:厨酒2茶匙,生抽酱油1大匙,头抽酱油1大匙,蚝油1大匙,糖1/3茶匙,水1/4杯,盐1/4茶匙;
4:生粉1茶匙,加水1大匙拌匀;
5:鸡粉1/6茶匙,香油1茶匙。
注:1大匙tbsp =15毫升,1茶匙tsp =5毫升,1杯 cup=240毫升。
做法:
1、豆腐水冲洗后沥水后,每块切4等块,再对角切成三角形(图1)。
2、不粘锅加2大匙油,置炉上开大火,放入豆腐煎黄。翻转再煎黄另一面(图2),盛出待用。
3、原锅再放1大匙油,放入姜、蒜及葱花炒香,然后放入泡好的小干贝(图3)炒1分钟,依次放入调料3,然后放入煎好的豆腐(图4),煮滚几分钟至汁较浓。
4、放入4料生粉水(图4),淋下香油和鸡粉兜匀出锅。
