【白糖糕】

最近做了好几种儿时常吃的东西。第一次做这个白糖糕的时候,发的有点过,有点偏酸,LD们都不是很喜欢。第二次再做加少量泡打粉,就不酸了。如果你喜欢甜中带酸的,就不用加泡打粉。白糖糕成品很白,蜂窝结构成型漂亮,大家来试一试。
用料:
1:水磨粘米粉1杯(124克,图1),白糖1/4杯(53克);
2:水1杯(235克);
3:酵母 1/2-2/3茶匙,泡打粉1/2茶匙,温水1.5大匙;
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。
做法:
1、将所有1料放入盆中拌匀,然后加2料的水,用勺子搅拌到无颗粒(图2)。将一多半的米糊放入小号锅里,开中火,同时不断搅拌,煮至底部开始结块时离火(图3)。
2、将煮好的米糊倒入另一小半没有煮的米糊里,用打蛋器 handheld mixer 打匀(也可以用勺子搅拌)(图4)。如果还有颗粒的话,用勺子压碎并搅拌至米糊均匀。
3、将所有3料放一小碗中拌匀(图5),倒入米糊中(图6)搅拌均匀(图7)。
4、盖上保鲜膜,放在温暖的地方发至2倍大(图8);或者将米糊倒入内壁涂了少许油的玻璃容器里,盖上盖子,放在温暖的地方发至2倍大。
5、将玻璃盒放微波炉里加热4-5分钟,用牙签插入试试,拿出是干净的即可。成品洁白, 蜂窝很多,口感软Q很好吃。
