【糊涂鸡】

因为自己做了剁椒,所以尝试了这个川菜糊涂鸡,用了文学城里宝煲的煮鸡方法,皮很Q,鸡肉很嫩。糊涂鸡很美味啊,大家一定要试试。
1:鸡一只1450克,最好是用国内的三黄鸡,可惜俺村没有这个;
2:葱一条切段,姜10克切片;
3:冷水10杯,盐2大匙,冰块2杯;
4:橄榄油1大匙,蒜蓉1大匙,葱花1大匙,姜末2茶匙,花椒粉1/3茶匙;
5:剁椒2大匙,镇江香醋2茶匙,盐1茶匙,糖1茶匙,辣椒油1大匙,头抽酱油1大匙,鸡粉1/6茶匙,冷开水2大匙,香油1茶匙。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、大锅注入水至八分满,放入2料的葱姜,置炉上开大火煮滚。拎住鸡腿末端,将鸡浸入滚水中烫10秒钟,提起鸡,将锅盖放鸡下面接住滴下的汁水,然后放水池中用冷水冲凉。再将鸡浸入滚水中烫10秒钟,再冲冷水。然后将鸡放回滚水里(图1),盖上盖,调小火保持水微沸,焖煮30分钟。
2、将3料冷水和盐放入一大盆里搅拌均匀,然后放入2杯冰块,将煮好的鸡放入冰盐水里(图2)浸泡30分钟。
3、不粘锅加1大匙油,置炉上开大中火,炒香剩余的4料后(图3)离火。将剁椒斩碎(图4),连同炒香的葱姜蒜、花椒与所有5料拌匀成调味汁(图5)
4、鸡沥水后斩小块,浇上做好的调味汁,就可以上桌了。
